Chocolate chip cookies
Ingredients
225 g
soft butter
250 ml
soft brown sugar
2
extra-large eggs
30 ml
milk
500 ml
self-raising flour
500 ml
cake flour
5 ml
vanilla essence
5 ml
baking powder
350 g
dark chocolate, coarsely copped
125 g
pecan nuts, chopped
Method:
Preheat the oven to 190 ºC and oil a few baking sheets or spray with non-stick spray. Line with baking paper. Place all the ingredients, except the chopped chocolate and nuts, in a mixing bowl and mix well (or blend in an electric blender) to form a stiff dough. Add the chopped chocolate and nuts and mix. Cover and allow to stand for at least an hour. Roll the dough into fairly small balls and flatten slightly. Arrange on the baking sheet, leaving enough space between each to allow for spreading. Bake for about 15 minutes until firm on the sides but still slightly soft in the centre. Serve lukewarm.
Makes 70 cookies.
