Seafood cocktail

Ingredients

cucumber, cut into small pieces
1
onion, finely chopped
1
large tomato, chopped
1
lemon (juice and zest)
20 ml
freshly chopped dill
50 g
mussels, cooked and removed from the shells
175 g
prawns, peeled and cooked
125 g
calamari rings, cooked
SAUCE
60 ml
low-fat mayonnaise
5 ml
tomato purée
dash of Tabasco sauce
salt and freshly ground black pepper
GARNISH
lemon wedges
sprigs of fresh dill

unpeeled prawns, cooked
Method:
Mix together the cucumber, onion, tomato, lemon juice and zest and dill. Spoon into 4 individual serving glasses. Toss together the mussels, prawns and calamari and then spoon on to cucumber mixture.
Mix the mayonnaise, tomato purée and Tabasco, then season with salt and pepper. Spoon sauce on to seafood and garnish with lemon wedges and dill. Just before serving, decorate the base of each glass with a few unpeeled prawns. Serves 4.
