A great place to start would be to visit the Professional Organiser Association Africa http://www.poaa.co.za
You can ask there if anyone is keen for you to assist them or just browse their site and see what resources you can find. They offer a Professional Organiser Course DVD set and workbook (click on the education tab and you will see it there). It is great value and crammed with useful info on getting started in this industry.
