Baked potato and chicken salad

Ingredients

medium potatoes, halved
olive oil to drizzle
lettuce leaves
basil leaves
4
smoked chicken breasts, cut into strips
2
soft-boiled eggs
100 g
feta cheese, cubed
DRESSING:
30 ml
lemon juice
45 ml
olive oil
1
egg yolk
15 ml
garlic, crushed
salt and pepper, to taste
Method:
Preheat oven to 180°C. Place the potatoes on a baking tray. Drizzle with oil and roast for 25 minutes or until soft and
golden brown. Arrange the salad leaves on 4 plates, top with baked potatoes, smoked chicken strips, Feta cheese and basil. Garnish with boiled eggs cut into quarters, lengthways. To make dressing; beat together lemon juice, olive oil, egg yolk, garlic, salt and pepper. Drizzle over salad just before serving.
