Stir-fried pork fillet with carrots, honey and ginger
A stir-fry is a healthy choice, perfect for weekday evenings when there is not much time to make food.

Makes: 4 portions
Preparation time: 20 minutes
Cooking time: 10 minutes
15ml peanut oil or sunflower oil
300g pork fillet, cut into strips
1 – 2 cloves garlic, bruised
1 bunch spring onions, chopped
2 star anise
1 red chilli, chopped
1 thumb-sized piece of fresh ginger, grated
1 bunch of young carrots, peeled, cut into strips
20ml honey
15ml soy sauce
30ml chicken stock
1 bunch bok choy
handful fresh coriander leaves
1 Preheat the oil in a wok
over high heat. Stir-fry the
pork fillet pieces with the
garlic and spring onions
for about 2 – 3 minutes
until golden brown. Spoon
out and set aside.
2 Add the star anise, chilli,
ginger and carrots and stirfry
for about 2 minutes.
3 Add the honey, soy
sauce and chicken stock
and simmer for about 2
– 3 minutes or until the
sauce starts to thicken. Stir
in the pork fillet, followed
by the bok choy, and stirfry
until tender. Remove
from the stove.
4 Garnish with fresh
coriander and serve.
