Pistachio nut
The small,pale green kernels have a unique flavour. It's popular in the Middle East and Greek and Lebanese delicatessens.

Use: Pistachios are often added to terrine, pork sausages, or tossed in butter to garnish pilaff and can eaten as a snack. These nuts go best with veal, port and poulty. The green colour makes it very popular for creams and ice-creams. In confectionery it is especially associated with nougat.
