Cook's Notes

Pressed Sushi from YOU
There are no separate courses in Japanese culinary tradition. All the dishes are served together. Sushi can be served as individual portions or on a large serving platter for the entire table so guests can help themselves. Serve six to eight portions of sushi a person.

Sushi is served with a little wasabi, pickled ginger and soy sauce. Provide each guest with a side plate so they can help themselves. Never pile a serving platter with sushi. Rather use more platters. Sushi fundis drink miso soup between bites of sushi. Traditionally the soup is drunk directly from a wooden or lacquered bowl (without a spoon).
