Terrines are elegant, filling – and easier to make than you think! They're usually made with meat, fish or seafood and, once they're unmoulded, are served cold and sliced. This mock chicken one is a surewinner!

Easy slicing
Cover the terrine with foil and place a heavy object on it to weigh it down while baking. This will make it compact and easier to slice.
