Custards are divided into two types: stirred (cooked on the stove) and set (those that are baked). They use the same basic ingredients - fresh, full-cream milk, egg yolks and sugar, and almost any flavouring can be added, like chocolate, coffee, spices or citrus in desserts, or savoury fillings in quiches.

Ingredients

 1 litre milk
 1 vanilla pod, split lengthwise
 4 large eggs, separated
 100 g castor sugar

Step 1

Heat milk and vanilla pod in a saucepan until milk begins to simmer. Remove from heat and leave to infuse for 15 minutes. Beat egg yolks until smooth.
