Ingredients

DOUGH
 250 g Cake flour
Pinch of salt
 1 Egg
 140 ml Lukewarm water
 2.50 ml Lemon juice
FILLING
 100 ml Sultanas or raisins
 50 ml Rum
 45 ml Butter
 100 ml Breadcrumbs
 155 ml Sugar
 1 kg Granny smith apples
 50 g Ground almonds
 5 ml Ground cinnamon
Zest of one lemon
 150 ml Melted butter
 45 ml Icing sugar

Step 1

Dough: Sift the flour and salt in a mixing bowl and make a well in the centre. Beat the egg, lukewarm water and lemon juice together and gradually add it to the dry ingredients. Rub the flour and liquid together with your fingers until coarse crumbs are formed. Add more water if it's too dry ? it has to be fairly soft. Press the dough into a ball. Sprinkle flour on a work surface and knead the dough for 6 minutes by picking it up and throwing it down until it's shiny and smooth. It can also be kneaded in a food processor with a dough hook. Cover the dough with clingwrap and let it rest for at least 30 minutes.
