Chocolate and almond fudge brownies
Ingredients
200 g
soft butter, cubed
275 g
castor sugar
4
large eggs
150 g
cake flour, sifted
190 g
ground almonds
200 g
dark chocolate, melted
60 ml
brandy
cream or mascarpone cheese, to serve
Method:
Beat the butter and castor sugar until light. Add the eggs, one by one, beating well after each addition.
Stir in the sifted flour and ground almonds, then stir in the melted chocolate and brandy. Mix well.
Spoon into a lined and greased 22 cm round cake tin.
Bake in a preheated 160 ºC oven for about 1 1/4 hours until firm to the touch.
Remove from the oven and allow to stand for 10 minutes before turning out onto a wire rack to cool.
Cut into wedges and serve with mascarpone cheese or cream.
