Salmon, cucumber and avocado sushi salad

Ingredients
1 English cucumber, cut into long, thin shavings
100 g daikon (white radish), cut into long shavings
30 ml lime juice
30 ml mirin (rice vinegar)
5 ml minced fresh chilli
5 ml sugar
250 g fresh salmon, diced
1 avocado, peeled, stoned and diced
40 ml pickled ginger
seaweed, cut into very thin strips
black sesame seeds for garnishing
mint leaves for garnishing

Method:
Toss cucumber and daikon with lime juice, mirin, chilli and sugar. Divide between 4 bowls. Top with salmon, avocado, pickled ginger and seaweed. Garnish with sesame seeds and mint leaves and serve.
