Spicy spinach fritters
Preparation time: 10 minutes
Cooking time: 20-30 minutes
Ingredients
300 g
fresh spinach, finely shredded
4
cloves garlic, crushed
15 ml
dried crushed chillies
80 ml
freshly chopped coriander (or parsley)
375 ml
chickpea flour
8 ml
gluten free baking powder
50 ml
water
oil for deep frying
350 ml
Bulgarian yoghurt
Method:
Mix the spinach, 2 cloves of garlic, 10 ml chillies, 60 ml coriander, chickpea flour, baking powder and water together to form a thick batter.
Heat the oil until a cube of bread browns in about 40 seconds. Drop spoonfuls of the batter into the oil and cook for about 5 minutes per batch or until crisp and cooked though. Fry about 4 at a time. Drain on absorbent paper.
Mix the yoghurt with the remaining garlic, coriander and chillies and serve with the fritters as a dip.
