Beef and quince stew
Cooking time: 35 minutes
Ingredients
500 g
lean beef, thinly sliced and cubed
500 ml
diced onions
a little olive oil
500 ml
diced potatoes (peeled)
500 ml
diced carrots
500 ml
quince pieces, peeled and cut off the core
1 litre
water
a dash Worcestershire sauce
30 ml
lemon juice
250 ml
diced green peppers
500 ml
diced tomatoes
salt and pepper to taste
Method:
1. Brown the meat and onions in olive oil then reduce heat and add the diced potato, carrots and quince and stir-fry for a few minutes before adding the water, sauce and lemon juice.
2. Allow to simmer for about 15 minutes, then add the remaining vegetables. Simmer for a further 15 to 20 minutes until tender. Taste for seasoning, adding more water if necessary. Serve with brown rice and green beans or peas.
