Artichoke and feta sandwich filling

Preparation time: 10 minutes

Ingredients
2 x 410 g cans artichokes, drained and roughly chopped
1 disc reduced-fat feta cheese, crumbled
30 ml sun-dried tomatoes in oil, roughly chopped
15 ml reserved sun-dried tomato oil
12 depipped green olives, roughly chopped
60 ml Italian parsley, chopped
15 ml olive oil
7 ml white balsamic vinegar
salt and milled pepper

Method:
Mix all ingredients together and place in a suitable container.
Serve as a sandwich filling or on crackers.
NUTRITION PER PORTION: Energy 525 kJ; Carbs 5 g; Protein 4 g; Fat 10 g.
