Rice for sushi

Ingredients
250 ml
sushi rice
3 ml
salt
375 ml
water
25 ml
sugar
30 ml
rice vinegar
Method:
Soak rice in cold water for 15 minutes, drain, leave in colander for 20 minutes. Transfer rice to a saucepan and add the salt and water and bring to the boil. Reduce the heat and cover with a tight fitted lid. Simmer for about 15 minutes until all the water has been absorbed. Remove from the stove and remove the lid. Leave to stand for 15 minutes. Meanwhile, dissolve the sugar in the vinegar in a small saucepan over a low heat. Stir constantly. Remove from the heat and cool. Spoon rice into a shallow bowl. Add vinegar mixture slowly, using a 'spatula' to slice through the rice to separate the grains. Cover with a dish towel and use within 12 hours. Do not refrigerate.
