Vegetable samoosas
Ingredients
oil for frying
1
small onion, finely chopped
1
clove garlic, crushed
1
small red pepper, seeded and finely diced
65 ml
frozen green peas
1
carrot, peeled and grated
5 ml
curry powder
3 ml
garam masala
270 g
packet won-ton wrappers
Method:
Heat oil in a frying pan and cook onion and garlic for a few minutes, until the onion is soft.
Add pepper and cook for 3 minutes.
Add peas, carrot, curry powder and garam masala.
Remove from heat and stir until well mixed.
Season with salt and black pepper.
Place a heaped teaspoonful of vegetable mixture in the centre of each won-ton wrapper, dampen the edges with water and fold in half, creating a triangle to enclose the filling.
Press the edges firmly, forming a little parcel.
Deep-fry batches of the samoosas in hot oil for 5 minutes, or until gold brown.
Drain on paper towels and serve hot.
