Glaze
A mixture or liquid that is brushed on the surface of food, giving it colour and shine. Glazes are used for pastries, bread and cakes. Examples are heated fruit jam or chocolate that has been thinned with melted vegetable shortening. Foods such as vegetables are glazed when cooked with butter and sugar. Glaze also refers to the syrupy liquid produced when boiling meat, poultry or fish stock.

Grate
