150g dark chocolate
200g butter or margarine
3 extra large eggs
310ml sugar (1¼ cups)
5ml vanilla or caramel essence (1 tsp)
160ml cake flour (2/3 cup)
250ml walnuts or pecan nuts, optional
Melt chocolate and butter in microwave oven. Leave to cool slightly.
Whisk eggs and sugar until light and creamy. Add essence. Fold chocolate into egg mixture and mix well. Sift flour and fold in until smooth.
Spoon mixture in a greased oven pan of about 20cm x 24cm and bake in preheated oven at 180 degrees Celsius for about 35 minutes. Leave to cool in pan and cut into squares.
