175g butter
175g castor sugar
3 large free range eggs
250g self raising flour
3 tbsp milk (approximately)
finely grated zest of 1 lemon
Preheat oven to 180C. Grease a 900g cake/loaf tin. Cream butter and sugar together in a bowl until pale and fluffy. Beat in eggs one at a time, beating mixture well between each egg (add 1 tablespoon of the flour with last egg to prevent curdling). Sift flour and gently fold in with enough milk to give a mixture that falls reluctantly from the spoon. Fold in lemon zest. Spoon mixture into prepared tin and lightly level the top. Bake on middle shelf of oven for 45 minutes. Leave cake to cool for 10 minutes then turn out onto wire rack. - Nicky
