Recipes today often call for leaf gelatin and I can't find it at my local supermarket.

Gelatin leaves are the professional cook's choice, and you should find gelatin leaves at top-end delis. If not, here is a handy conversion chart: one sheet of gelatin is equal to 2ml (½ teaspoon) of powdered gelatin. And 25ml (5 teaspoons) of powdered gelatin is equal to 15g of powdered gelatin.
