Why does spreading an egg on pastry make it brown?

Answer:
Lannice Snyman says:
I presume you mean beating an egg and brushing it onto the surface of the pastry, which turns a beautiful golden brown as it bakes. This is simply a response of oven heat to the egg. You could also brush the pastry with a little milk.
