Savannah, this is a very wide question that you have asked and one that I can crisply answer by advising that you make contact with the HR departments of one or two of the more reputable publishers.
You will be able to discuss fully with them the different positions that are available in this industry - and there are many. They will also be able to provide you with some insights into the knowledge, skills and competencies that one requires for the various position.
